Till next time!

They used CGI or Computer-Generated Imagery.

They use cows or large cardboard standees or the potato, which is this big stand-in object that’s about the same size as a wolf so that the actors can fight with it.

Can I rephrase my answer?:
To help the actors and crew “see” the wolves, cows or large cardboard standees were used. They also used the potato, which is a big stand-in object that’s about the same size as a wolf and the actors can fight with it, wrestle with it and be hit by it.

Change of answer: At some parts of the fight scene, large cardboard standees in the silhuette of the wolves were placed. In the ravine chase, the wolves were In CGI, and during the battle between the cullens, newborns, and werewolves, the actors were ‘flung’ around with ropes. They also used the ‘potato’ at the part where Jacob was getting hurt, and the cardboard standees at certain parts.

They used white cardboard cut outs in the exact sane size as how big they want the wolves to be. For the fight, they also used it but also used weight( a grey bag)connected to strings to be flung around and to push the newborns.
